If this is your first visit to Rajasthan yours will be counted incomplete without trying the local delight dal bati churma. The staple and famous dish of Rajasthan includes bati a baked flour ball that is immersed in ghee and served with the special dal. Churma, on the other hand is a dessert, made in a variety of flavours and served along with the main course.

This special desert vegetable in a combination of dried berries and beans cooked with yogurt and Indian spices. Rajasthan being a dry state has had a dearth of fresh vegetables, hence they use much of flours, grains and pulses. With lots of spices, oil and yogurt it gives a tangy taste, similar to a pickle. This is made with generous amount of oil and spices and is very good to carry for traveling as it stays fresh for 2-3 days without refrigeration

Gram flour is mostly used to make kadi ,subzi and snacks in this hot and dry state. But at the same the Rajasthani chefts also dish out delectable desserts from the flour. A very famous yoghurt dish that completes a meal for every North Indian is Raaita. The purpose for it to be served along with the meal is to balance out the taste of spices in your food and enhances its flavour. It is sweeter version of kachori, and filled with dry fruits and khoya. After frying it is immersed in sugar syrup. It is said to be a must-try.

Pyaaz Ki Kachori

 

 

 

 

Another variation of kachori, pyaaz kachori is prepared with a filling of onions, potatoes and spices. Served with sweet and sour tamarind chutney this is the most popular breakfast dish here

Gatte

 

 

 

 

 

Besan dumplings are first filled with generous amounts of spices and then either deep fried or boiled giving different variations to this popular dish. The dumplings are later simmered in yogurt curry. The spicy, thick gravy tastes awesome with all kind of chappatis.  

Gujia

 

 

 

Gujia is a sweet dumpling made with suji or maida flour, wheat flour and stuffed with khoya. Commonly known as a sweet savored during festivals.

Ghevar

 

 

This is a Rajasthani sweet traditionally associated with the Teej Festival. It is disc-shaped sweet made with all-purpose flour and soaked in sugar syrup. There are many varieties of Ghevar, including plain, mawa and malai ghevar.
